Chase Pink Grapefruit and Pomelo Gin
A truly local, estate product made on William Chases Herefordshire farm, the spirit is made from their own organic cider apples. The process starts by mashing the apples, which ferment naturally for a week or so producing a cider thats nearly strong enough to be a wine. The wine is added to a bespoke copper batch pot still where its distilled five times, its then distilled again with eleven wild botanicals including juniper, coriander seeds, angelica seeds, angelica root, liquorice root, orris root, orange and lemon peel, hops, dried elderflower and fresh Bramley apples cut into eighths. The raw spirit is tempered down to 40% abv with spring water drawn from a source on the farm, it's then hand bottled.
Full-bodied, crisp and fruity.
